HOW TO MAKE OLIVE OIL, RAISIN AND LEMON COOKIES

Impressed by way of his Spanish roots, famous person chef Omar Allibhoy creates a fool-proof cookie recipe bursting with flavour.

Serves four

Components

125g (2/Three cup) caster (superfine) sugar

100g (half of cup) brown sugar

150ml (2/Three cup) Further virgin olive oil

1 tsp vanilla extract

1 egg

100g (Three/four cup) raisins

½ tsp salt

Grated zest of one lemon

250g (1-Three/four cups + 2 tbsp) self-raising flour

Approach

In a large bowl, vigorously whisk each the sugars with the olive oil for two mins.  Upload the vanilla extract and the egg and whisk for any other 2 mins.  Upload the raisins, salt and lemon zest.  Sift over the flour and fold with a spatula for now not than 2 mins.  The combination will lose its fluffiness and get more impregnable the longer you fold it, so don’t overdo it.  Sit back the dough within the refrigerator for 30 mins.

Preheat the oven to 180°C/fuel mark four and line a baking sheet with parchment paper.

Roll the chilled dough into balls the scale of ping pong and position at the ready baking sheet, leaving a minimum of 10 cm (four in) between every one to permit for spreading.  Bake for approximately 7 mins if you happen to like them comfortable and doughy, or nine mins if you happen to choose them crispier.
